Cause apparently we need one ^^

For Kat:


Cajun Chicken with chickpeas.

300g of chickenbreast, cubed at about 1x1cm
1 large onion, in large slices
2 cloves of garlic, minced
1 tin of chickpeas, cleaned and dried
Oil
Cajun spice mix, 3 teaspoons

1. Fry the onion and garlic in oil, till the onions are clear.

2. Coat the chicken in the cajun spice, and add to the pan. Fry for 5-10mins, till the chicken is nearly done.

3. Add the chickpeas and fry for another 5mins.

Serve with rice or other sort of boiled grain (couscous, bulgur or the like).

My summer go-to meal (which is cheaty as heck but yummy and quick):

Chicken Pasta Salad
1 small grilled chicken (we can get these ready to eat in Norway),
1 bag of salad
Around 300-400g dry pasta of your choice. I like macaroni.
Favourite salad dressing (I make my own caesar style dressing with mayo, garlic, lemon, oregano, salt, pepper and a touch of sugar or honey)


Take the chicken meat off the bones and chop small, save the carcass and boil it with onions and herbs to make chicken stock if you have time. I usually dont. Boil the pasta, drain and rinse in cool water. Mix the chicken, pasta and salad bag together. Add the dressing and toss the mix so the dressing is coating everything. Serve, enjoy. Additions that would be yummy: croutons, bacon bits, fried onion bits, nacho chip bits, any extra veggies you like.
